Using the Hario Sommelier Coffee Syphon (5 Cup)
The Hario Sommelier Syphon combines precision and theatre, brewing coffee in a way that highlights aroma, clarity, and texture. With Gran Reserve, this method enhances milk chocolate sweetness, caramel depth, refined red fruit, and a bright grapefruit lift — finishing with a long, buttery aftertaste.
Unlike standard filter brewing, the siphon uses full immersion followed by vacuum filtration. This creates a cup that is both structured and elegant, with balanced intensity and exceptional aromatic expression.

This ratio and immersion time are designed to develop caramel sweetness and buttery texture while preserving grapefruit brightness and red fruit clarity.
Step-by-Step Brewing Method
1. Prepare the Syphon
Fill the lower globe with 600ml filtered water.
Secure the upper chamber and ensure the filter is properly rinsed and seated.
Begin heating the lower chamber. As the water approaches 92–94°C, it will rise into the upper chamber.
2. Add the Coffee
Once most of the water has transferred to the top chamber, add 35g of medium-ground Gran Reserve.
Start your timer.
Stir gently for 5–7 seconds to fully saturate the grounds. This initial stir ensures even extraction and supports clarity in the cup.
3. Immersion Phase (1:15–1:30)
Allow the coffee to steep in the upper chamber for 1 minute 15 seconds to 1 minute 30 seconds.
During immersion, you will begin to see the structure build:

If needed, give one gentle stir at 45 seconds. Avoid over-agitation.
4. Drawdown
Remove the heat source.
As the lower globe cools, the brewed coffee will filter down naturally through vacuum pressure. Drawdown should take 45–75 seconds.
The result is a cup with clarity, balance, and a refined, buttery mouthfeel.
